I think it'd be this plus ballistics gel. If you jumped off a diving board feet-first from high enough up that you penetrated to over your head, I think you'd end up sitting at the bottom of a jell-o tunnel looking up at the sky.

If you subsequently thrashed around enough that you caused a cave-in, you could definitely suffocate. I would totally test this out with either scuba gear or a winch cable attached to me. Or preferably both.

Edit: My answer assumes you filled a pool with liquid jell-o and let it set. Pool full of jell-o cubes would be instant cave-in. If it was a rain barrel full of jello, I would say yes.
