On my own work system I've had to increase the memory allocation to word for the very same reason, and since doing so have stopped the hang-ups, freezes and crashes to a large extent.
Using Office 64 Bit is an option, but we could never get it to work properly for us, and that may be my own personal limitations rather than Office itself. I took a casual read through this and I think that this might be able to assist in resolving the problems for you. Yes you delete the Profile it will get any and all files associated with that user that are stored on the PC.
Like you said documents, music and desktop files. Things that also will go by by, Internet Favorites, possibly outlook PST depending on where its stored. The better thing todo might be copy the profile to the server as a backup before you being working. If there's anything in there you want to keep, make a copy of it. Unfortunately, renaming a profile dir in Windows 7 probably later too isn't smart because trying to delete it from System Properties fails because the dir is gone, thus you can't remove it after all.
So make a copy of the data you want to keep, use System Properties to delete the profile, then plug the old data back in. Don't just delete the directory structure - delete it from System Properties so it can delete the registry entries associated with the profile as well. I am thinking there is something wrong with her profile nothing else is working for the EXCEL crashes. I wish Microsoft would fix it.
I sounds like it is an issue with many people. Have you posted a question to the community about that issue first? Is it only one document or all Excel files for everyone? Can other users open the same Excel files? It is a few select users that are having issues with Excel crashes. I opened the file that was in question no problems at all.
There are people that use excel more then some of the people with issues that have no issues at all. So it is frustrating. But if there comes a point when you want to delete a user, either because they don't need it anymore or you want to block their access, deleting a user account from a Windows 10 PC is simple, as long as you're using an Administrator account.
